Mastering Sauces, Susan Volland
Of course, if I’m addressing a book about sauces, I must compare it with my own. This book is a bit more user-friendly than mine, which some people find intimidating. This book does not impart the hierarchical system of classic French cooking, but it doesn’t need to. It’s addressed to the home cook and in so doing contains much useful information and tempting recipes. Also, a number of vegetarian recipes. Copyright 2015, first edition, first printing, hardcover, full-color, 495 pages, condition excellent (the book has been handled, but barely)
