La Bonne Cuisine de Madame Saint-Ange (English)
I have learned more from this book than possibly any other. Much of it is classic stuff, but that’s beside the point. The raison d’être for every move is explained. Much better for learning than Escoffier. Very good translation. I endorsed the back cover: “Filled with good sense, logic, and boundless information about the world’s best home cooking.” Copyright 1927, this edition 2005, hardcover, 786 pages, excellent condition
