Susanna Foo was one of the first to create a book that made Chinese food look elegant. It reminds me of a Manhattan restaurant where I went years ago (40+!). The restaurant, Uncle Tai’s (don’t quote me on the spelling), was the last classic Chinese restaurant to close in Manhattan. People were not willing to pay the price for Chinese food prepared at this level. Here, I see that same lovely finesse.
